Truthfully its not a salad. I eat it as a dip with some organic chips. This happens to be one of my favorite things to eat! It is easy to cook & make. Doesn't take a long time and you can either eat it as is or chill it for a bit too.
I also thought I'd throw in there what quinoa was in case you may not know.
1 cup quinoa
2 cups water
1/4 cup olive oil (I use extra virgin)
2 limes or lime juice to taste
2 teaspoons ground cumin
1 teaspoon salt
1/2 teaspoon red pepper flakes or to taste
1 1/2 cup cherry tomatoes
1 can black beans drained & rinsed
5 green onions or 1/2 regular onion finely chopped
1/4 chopped fresh cilantro or to taste
salt & pepper to taste
Cook quinoa according to package details. I simmer until the quinoa is tender & water absorbed. Set aside to cool.
Mix olive oil, lime juice, cumin, 1 teaspoon salt & pepper flakes together in bowl.
Mix quinoa, tomatoes, black beans, & onions together in bowl. Pour olive oil mixture over quinoa & toss to coat. Stir in cilantro & season with salt & pepper.
Serve immediately or chill.
I have made this several times, several different ways. I don't often have green onions on hand and often don't put onion in it at all & it still tastes fine. I use more cilantro because I love it as well & use more cherry tomatoes depending upon my mood. I don't buy organic beans normally because once you have washed them and drained them you get the gunk off anyway so there is no need to go organic with it unless you really want too. I don't always put in red flakes either. While I like a lil spice, it doesn't like me so I often leave this out & it still tastes fine. I also use more lime juice because I want a lil more kick that way. And sometimes I don't use the amount of oil olive either, but its only really used to mix all the seasoning together in it. I have served this cold & immediately & I have to be honest I prefer eating it immediately or room temperature. I have also heated it up and it tastes better to me that way. I am sure you could put more in this dish if you wanted too and play around with it!
